Laila's Easter Decor



     Come hop with me into my home and see my Easter decor  - décor that’s all about  Easter! Easter eggs, Easter bunnies, peeps and chicken! While doing up my Easter decorations, I never forget the meaning of Easter which is about the resurrection of Christ. I’m happy and joyful that Christ has risen from the dead and He is the center of everything that I am and do. I enjoy Easter and I celebrate it because I remember why I am celebrating!

Christians adopted the colored egg as a symbol of new life which comes with the Resurrection.

  • Can Easter decor be complete without Easter bunny and eggs?
     Seriously, what do bunnies and eggs have to do with Easter or the resurrection of Christ? Nothing, actually! Since birds usually lay their eggs in spring and rabbits which are very fertile animals whose babies scamper about in spring, eggs and bunnies became the natural symbol for spring, rebirth, and new life.

'For God so loved the world, that He gave His only begotten Son, that whoever believes in Him should not perish, but have eternal life. For God did not send the Son into the world to judge the world, but that the world should be saved through Him' John 3:16-17

A sincere prayer  for my daughter...Dear Lord, I only ask that you send her your Holy Spirit, as I place her in your heart.May she follow in Your footsteps as she walks through life each day. Please bless her, and watch over her, with humble heart I pray.Amen.

Blueberry Cheesecake






    I was thrilled! My first baked cheese cake came out absolutely perfect! I could not help admiring my handiwork for hours on end! My daughter loves cheese cakes and she demanded Blueberry Cheese cake for Christmas. I found a tin of blueberry pie filling on the shelves of the local supermarket and then I got down to hunting a good recipe from the net. I came across a recipe at a blog called Simply Recipes which looked soo good. I saved it up and the day before my daughter and son arrived I tried it out. When done, out popped a perfect cheese cake from the oven! I was totally over joyed, elated, ecstatic and delighted! I know, I know, that I’m going a little overboard with the adjectives…but I’m justified, am I not ? *Big  grin*


Here’s the recipe that I followed, but with a small change. The original recipe has sour cream and raspberry topping whereas I used the Blueberry pie filling. Next time when I can lay my hands on some raspberry, I’ll really do want to give the raspberry topping a shot! 
Well, here we go....


Blueberry Cheesecake


Crust

  • 2 cups (475 ml) of Graham cracker crumbs
  • 2 Tbsp sugar
  • Pinch salt
  • 5 Tbsp (70 g) unsalted butter (if using salted butter, omit the pinch of salt), melted

Filling

  • 2 pounds cream cheese (900 g), room temperature
  • 1 1/3 cup granulated sugar (270 g)
  • Pinch of salt
  • 2 teaspoons vanilla
  • 4 large eggs
  • 2/3 cup sour cream (160 ml)
  • 2/3 cup heavy whipping cream (160 ml)

Method

  •  Preheat oven to 350°F and prepare the springform pan by covering it with aluminum foil so that no water leaks into it while cooking.





  • Crush the graham crackers in a food processor or blender until finely ground. Transfer it to a large bowl, and stir in the sugar and salt. Then,stir in the melted butter. Mix well.
  • Next, put the graham cracker crumbs in the bottom of the springform pan and gently press down the crumbs  until the crumbs are a nice even layer at the bottom of the pan!
  • Place the spring foam pan in the oven for 10 minutes. Remove from oven and let it cool. Reduce the oven temperature to 325°F.

 Make the filling
  • Place the cream cheese in a bowl and beat till smooth, soft and creamy.
  • Add the sugar and beat for some more time
  • Add the salt and vanilla, beating after each addition.
  • Next, add the eggs, one at a time, beating for one minute after each addition.
  •  Add the sour cream, beat until well mixed.
  • Add the heavy cream, beat until incorporated.
  • Pour the cream cheese filling into the springform pan, over the graham cracker layer. Smooth the top with a rubber spatula.
  • Place the foil-wrapped springform pan in a high-sided roasting pan which contains hot water. 
  • Now place the roasting pan with the springform pan in it, into the oven, on the lower rack. Cook at 325°F for 1 1/2 hours.
  •  Turn off the heat of the oven. Crack open the oven door 1-inch, and let the cake cool in the oven, for another hour. This gentle cooling will help prevent the cheesecake surface from cracking.
  •   Remove from oven.




  • When cool, cover the top of the cheesecake with foil, so that it doesn't actually touch the cheesecake. Chill in the refrigerator for a minimum of 4 hours, or overnight.
To serve, remove the cheese cake gently from the spring form ,  top with blueberry pie filling and serve!!!

Sounds of Silence - A Dedication To An Unknown Beautiful Woman



  I was flipping through an old book of mine, when out slipped a paper! It looked more like a page torn from an old magazine! I picked it up and saw that it contained some homemade recipes for hair packs. I presumed that I must have saved the paper for those beauty hair packs! The page was torn from a woman’s magazine called Femina, dated September 23-October 7, 1986.Then my eyes fell on a beautiful face on top of the page. As I read on, my eyes misted, my heart turned heavy and I felt a huge lump in my throat. What a coincidence that today is Woman’s Day and I dedicate this Woman’s Day 2013 to a courageous, beautiful unknown woman, Avijit.


 Here’s what is written in the column.. 


Sounds of Silence


Her world was silent, but that didn’t make any difference. Like all young people, pretty Avijit, too loved life and films, parties, dancing and good food. The only fact which made her any different from the rest of us was that she was deaf and dumb.


She was an excellent model too. We first spotted her at the beauty parlour at Hotel  Siddhaarth, (India) where she was a manicurist. Her expressive eyes, and her photogenic face, her long silky hair, her height (5’8”) and lissome figure rendered her a photographer’s dream. We shot various assignments with her for Fashioneete, L.W.S. Wollen wear and Maharaja saris.


 Avijit was the only daughter of an army officer and became deaf and dumb after a crippling illness in childhood. She was educated at  a special school for the handicapped at Kanpur and later completed graduation through correspondence.


In 1984, Avijit got married to a young man from Shimla (he was also deaf and dumb).but just after a year, on Karva Chauth day, Avijit met her tragic end. Her dupatta got entangled in an open manhole and she silently suffocated to death.

What a sad end to a beautiful young life, who loved to live and live as normal as possible in spite of her different ability. I dedicate this Woman’s Day to you Avijith, I salute your courage and your positive attitude!
